The country earns up to one million dollars annually from catching and selling conch. From conch shacks scattered around the island to the famous Fish Fry row at Arawak Cay, the conch salad is a true delight for both locals and visitors to the island. The salad is a mixture of raw conch, onions, green peppers, tomatoes, lime, and lemon juice. Flavorful spicy sauce can be added at the customer’s request to heat things up a bit. But this titillating treat isn’t just served raw. The coconut tree has been referred to as the "tree of life" and the "jewel of the tropics" because it is said to provide all that is necessary for living. Danny and I have quickly learned many ways to enjoy the abundance of coconuts found here on the island. We have discovered many healthy benefits in drinking the coconut water and eating the meat. Mostly enjoyed drinking straight from a freshly cut coconut but just as delicious when frozen to create slushies, the water is rich in nutrients which balance the bodies electrolytes, helps in digestion, toning the skin, and boosting hydration. ...

Here and Now: Our current adventures begin on Love Beach located in Nassau on the Island of New Providence. This beautiful area on the west end of the Island is a prime destination for snorkeling.
